'Stay grounded and never cease to be a student'

Celebrity chef Sanjeev Kapoor hosted 'Khana Khazana', a cookery show on television for over 17 years. And after ruling TV, the chef, is spreading gastronomic magic in the online space. In association with One Digital Entertainment, his YouTube channel has crossed the million-subscriber mark. In an interaction with Metrolife, the author of several books and winner of various culinary awards talks to Shweta
Sharma about the need to be on the social media, and how Indian cuisine has evolved over the years.

You hosted 'Khana Khazana', one of the first food shows on TV. Now, you have now moved on to the digital space. How different are the two mediums?


Of course there is a difference between the two, technically as well as in all other aspects. To add to this, I really feel that the interaction on digital space is real-time, making it faster and one-to- one. On the other hand, television looks at engaging a large group at once.

How important is it for people to be active on the social media?

Keeping in mind today's scenario, it is very important. But then make sure you don't slowly get into the category of 'FOMO' (read: Fear Of Missing Out!).

You are a household name. What does it need to be a good and successful chef?

Determination and understanding your strengths to work around them. Make sure to move out of your comfort zone, not once, not twice, but most of the times. Stay grounded, and never cease to be a student. Keep sharing your knowledge with others and keep raising the bar for yourself.

Indian cuisine has made a mark for itself globally. What is it that makes
it distinct?


Freshness is what makes our cuisine distinctive. We eat fresh, we eat what's seasonal. Our cuisine traditionally follows the diktats of the season and we eat accordingly. Along with this, our daily diet has food that's made from different techniques. Be it steaming, frying, boiling or roasting. Which cuisine can boast of all this on a daily basis?

How have Indian tastes evolved over the years?


Not just tastes, but everything from presentation techniques (using archaic Indian tools to plate, use of edible flowers and micro greens) to the use of science in cooking molecular gastronomy) and even pairing up unusual ingredients to develop and improvise traditional tastes and textures, Indian cuisine is right there on the world culinary map!

How different is it to create content for a digital medium?


Not much, I would say. The same amount of research, development, time and resources go behind creating content for the digital medium vis-à- vis any other
medium. But yes, one factor, that it reaches the youth more than any other medium, makes us think more and more about how to make the content unique and exciting that would keep them engaged for a longer time.

What is the best part about being associated with a digital network like One Digital Entertainment?


I'll give you two - efficiency and reach!

You have cooked for many. Is there one person you wish you get to cook for? Who is that person and what would you like to cook for them?


Apart from the fact that I recently cooked and served our Prime Minister Narendra Modi, I would love to cook some healthy yet super tasty stuff for our athletes who did us proud in Rio Olympics 2016!

What is your most memorable cooking experience and why?


Every time I cook for my family, no matter where we are, is the most memorable cooking experience for me.
